Taco Soup for the Slow Cooker

Zesty taco soup made in the slow cooker is excellent for Superbowl parties or a chilly night's simple dinner.

Ingredients

  • 1 lb. ground beef
  • 1 onion, diced
  • 1 pkg. taco seasoning OR 1 T cumin and 1/2 T chili powder
  • 1 small can hominy, drained
  • 15 oz. canned kidney beans, drained
  • 15 oz. chili beans with mild sauce
  • 28 oz. crushed tomatoes
  • 1/2 cup frozen corn
  • sour cream and tortilla chips

Instructions

Brown ground beef and onion. When the meat is brown and crumbled, add the taco seasonings and a splash of water. Cook over low for 5 minutes.

Throw meat mixture in a slow cooker with the rest of the ingredients except sour cream and chips (or in a soup pot). In slow cooker, cook on low 8-10 hours. In soup pot, simmer for an hour. Garnish with sour cream and serve over tortilla chips.

I love an easy taco soup when it’s cold outside, don’t you? I like a can of hominy thrown in, but it won’t make a difference if you leave it out.
