Zesty taco soup made in the slow cooker is excellent for Superbowl parties or a chilly night's simple dinner.
1 lb. ground beef
1 onion, diced
1 pkg. taco seasoning OR 1 T cumin and 1/2 T chili powder
1 small can hominy, drained
15 oz. canned kidney beans, drained
15 oz. chili beans with mild sauce
28 oz. crushed tomatoes
1/2 cup frozen corn
sour cream and tortilla chips
Brown ground beef and onion. When the meat is brown and crumbled, add the taco seasonings and a splash of water. Cook over low for 5 minutes.
Throw meat mixture in a slow cooker with the rest of the ingredients except sour cream and chips (or in a soup pot). In slow cooker, cook on low 8-10 hours. In soup pot, simmer for an hour. Garnish with sour cream and serve over tortilla chips.
