Publix Bargain Meal 3/18-3/24

A delicious, inexpensive, and healthy meal for any night! If your fridge drawer is really cold and freezes things–don’t try to shred frozen carrot. It turns out UGLY!

Perdue Boneless Chicken Breast, 2.99/lb
Fresh Express Salad 2.50
Fruit: White Grapes (1.49/lb), Granny Smith apples (2.50/3-lb bag)
Grape tomatoes might be good too, I just don’t eat them (1.25)

Jessie’s Maple Chicken Salad

1 recipe Maple-Orange Chicken (only use 3/4 lb. chicken but make whole amount sauce) (2.24 plus sauce ingredients)
1 bag salad greens (I used spinach, so I added some shredded carrot) (2.50)
chopped up fruit–pictured above I used halved grapes and orange sections (minimal–price of a couple handfuls of grapes, one orange, and/or diced apple)
*You could stretch your meat further by adding black beans or walnuts as a protein source instead of meat

Slice or dice chicken. Spread salad greens among 4 plates. Top with chicken (and/or nuts or beans), and fruit. Pour sauce from chicken over as dressing.
