Wow! I almost forgot about Bargain Meal of the Week. You can tell my head’s been stuffed up.
For this bargain meal, I am modifying this recipe for Edamame and Corn Salad with Shrimp from Snagwire Media.
Summer Veggie and Shrimp Toss
1 pkg. Margaritaville Island Lime Shrimp
1 pkg. Publix frozen veggies, defrosted and drained (corn and lima beans would be good, or any mixed veggie)
1 small onion, diced
15 cherry tomatoes
handful of cilantro
salt and pepper
Defrost shrimp, sprinkle with salt and pepper, and set to the side. Saute onion in olive oil until translucent. Mix veggies, onion, halved tomatoes, cilantro, and shrimp. Drizzle with olive oil and juice of lime, toss to coat. Salt and pepper to taste. Serve atop whole wheat couscous or rice.
