Menu Plan Monday

Running a little behind this week due to our weekend trip to Ohio. Because of that trip, we didn’t do some of our meals last week, and I also didn’t end up making the homemade Nutrigrain bars.

This week I plan on staying away from Sonic, eating more fruit and vegetables, and trying to get Libbie interested in something besides bread.

Monday: Chicken Fried Steak Strips, peas, apple slices
Tuesday: French toast, turkey bacon
Wednesday: takeout pizza
Thursday: Italian Cream Cheese Chicken Casserole, raw veggies
Friday: Pork Barbecue with Lexington Red Sauce on homemade buns, corn, fruit
Saturday: Leftovers for lunch, spaghetti and meatballs for dinner

Breakfasts: Christmas Eggs, grits
Lunches: Pizza Pockets, leftovers

(Obviously we’re still eating heavily from my Whole Foods in a Hurry menu. I still have a ton of food!)

  1. I had a hard time getting my little guy to eat fruit…then I tried smoothies! Try this!

    1 Banana
    1 c. frozen Strawberries (or Blueberries)
    1/2 C. milk (more or less depending on how thick you want it)

    Blend away! No sugar needed! She will think it's a milk shake! You can start to add in fresh spinach a little at a time as she becomes used to having it everyday! Great Breakfast! Good Luck!

  2. I wanted to thank you for leading me to the pizza pocket recipe. I made several variations for the freezer. My family absolutely loves them. They are a cinch to make when I make the pizza dough in the bread machine.

    Great menu!
