I am certainly enjoying having a whole freezer of frozen meals! This past week we feasted on Italian Cream Cheese Chicken Casserole, Gnocchi with Sausage and Swiss Chard, Tilapia and Pepper Packets, and Apricot Breakfast Bars. Libbie and I LOVED the breakfast bars. It’s definitely a recipe I’ll be repeating and experimenting with! I also served the Baked Chicken Burgers (on these homemade buns) at my little ladies’ lunch, and I could probably eat those for the whole month and be happy.
I will confess the gnocchi was probably not the best recipe to freeze. Also, the red Swiss chard dyed it all red, which was kind of weird. The Italian Casserole was not my favorite thing in the world, either, but I think it got watered down a little in the freezing as well, and my husband did like it a lot.
So anyway, here’s what’s on the menu for this week!
Sunday: Sweet Aromatic Chicken, curried onion rice, oranges [note: the chicken was major YUM!!!]
Monday: Make-Ahead Wraps with sour cream, raw veggies
Tuesday: Mr. V and Libbie to have pancake night; I’m going to Bible study
Wednesday: Unstuffed Cabbage
Thursday: Sloppy Joes, peas and onion (frozen), fruit
Saturday: Tilapia and Pepper Packets, broccoli stir-fry, rice
