Menu Plan Monday

This last week, well, just kind of stunk. I elaborated a little about it in my pregnancy update post. I was glad that many of our meals came from the freezer. I did manage to get food on the table, albeit without side dishes in most cases.

I am hoping this week I will be full of energy! Libbie and I are headed out of town on Thursday, so there’s only a few days to feed the family. Mr. V can fend for himself during the weekend. I’ll try to have something in the fridge, dear!

Sunday: Black Bean and Mango Chicken Salad, Chips (didn’t get to last week)
Monday: Crockpot Ham and Green Beans
Tuesday: Leftovers
Wednesday: Baked Spaghetti, Spinach Salad

Not sure if these are great (heh), but here are some easy ideas: quesadillas (corn, black beans, chicken, cheese, tomatoes–really whatever you want); blueberry pancakes; grilled cheese and tomato sandwiches with corn on the cob; chicken breasts in the crockpot w/a bottle of italian dressing, serve over rice (even my husband Picky McPickerson likes this).
