We have had the wildest weekend ever, and I hate having to jump back into real life. Let’s not even discuss the fact that I just had re-heated French fries and two pieces of taffy for lunch.
And you know, there’s that whole nearly 33 weeks pregnant deal as well.
(AND last week I not only cooked dinners but made Peanut Butter Banana Bread, cupcakes, cake from a box, pumpkin cookies, and a whole array of other things for Libbie’s party. Whose idea was it for our family to have two birthdays and Halloween in one week?)
I want to keep cooking, but I desperately need to get some meals in the freezer, too, for those times when I just don’t think I can do it! The November Once a Month Mom menu came out today, and I’m hoping to make several entrees from it for our freezer stash!
Without further ado, here’s what my plan is for this week (tentatively, at least).
Sunday: Leftover Buffet
Monday: Reworking the potato/corn chowder I made Friday. I think I am going to try to boil it down and then puree some of it and stir in a bunch of cheese. Voila, new soup!
Tuesday: Chili Sweet Potato Hash, Toast
Wednesday: Kelly’s Korner Chicken Bake (light on the lemon–I am not a big fan of the MAJOR lemon flavor in my green beans!)
Thursday: Marlboro Man’s Favorite Sandwich, veggies
Friday: Sweet and Sour Salmon, Rice, veggies
Anyone want to take a vote on whether I’ll have the oomph to cook all those things? Actually, the recipes are all fairly simple. So I’m crossing my fingers.
