Sweet and Spicy Chicken Sausage Spaghetti Recipe

I created this recipe for Sweet and Spicy Sausage Spaghetti a while back and only shared it on my Facebook page, because I’m sneaky like that. Or lazy? But lately I have been craving it and I thought it deserved to be shared with everyone out there.

I will say this is much spicier than the food I normally make, even using mild Ro-tel. I have very high sensitivity to spicy foods, and this leaves my mouth burning. But in a good way. If you are not a wimp and can deal with some Ro-tel, I’m sure you’ll be fine. But there’s your warning!

Sweet and Spicy Chicken Sausage Spaghetti

Sweet and Spicy Chicken Sausage Spaghetti Recipe

Ingredients

  • 1 package sweet chicken sausages, fully cooked, such as Aidell's chicken and apple
  • 1 Tablespoon olive oil
  • 10 ounces (1 can) mild Ro-Tel tomatoes with chiles
  • 3-4 Campari tomatoes, diced small (optional)
  • 1 cup marinara sauce OR 1 cup tomato sauce and 2 teaspoons Italian seasoning
  • 12 ounces spaghetti, cooked and drained

Instructions

Heat olive oil over medium heat in a large saucepan. Slice sausages. Add to hot oil and cook until brown. (Perhaps not black, as seen above. I think I was a little overzealous with my heat.)

Add Ro-tel, tomatoes, and tomato sauce to pan. Bring to a boil; reduce heat to medium-low and simmer 30 minutes. (Or, if you're pregnant, until you are about to gnaw your arm off.)

Serve sauce spooned over cooked spaghetti.
