Please don’t expect much from me since I have a two-week-old baby … but I thought having a menu plan might help me get through this week!
Monday: Ham and Potato Fritatta
Tuesday: Fish en Papillote and Shallot Rice
Wednesday: Shrimp Fried Rice from a bag
Thursday: Ranch Cheesy Potatoes and Ham (yes, trying to use up leftover ham from Christmas!)
Friday: Sweet Aromatic Chicken, veggies
Sunday: If you can find it, you can eat it.
I am completely aware this might be too ambitious for this first week on my own. I may try to do some extra prepwork Monday while my husband is still home from work. We shall see. I am not resistant to changing things up or eating fish sticks for dinner. 🙂
