My virtuous breakfast-lunch-dinner menu plan was all but ignored last week. I stuck to the meals I had planned for dinner, but got lazy about breakfast and lunch. On Monday, I had a hankering for Lynn’s peanut butter baked oatmeal, however; and since it’s an easy pantry meal, it was in and out of the oven in no time! To my great surprise, my toddler gobbled it up every time I served it to her.
This is my tentative menu plan for the week while I try to bear in mind I may have to head to Nashville to take care of our condo-flooding issue. (UGH.)
Monday: Chicken with Wine Sauce, baked potatoes, corn
Tuesday: Bacon and Onion-Stuffed Burgers, potato wedges, baked beans
Wednesday: Pasta Amatriciana, salad
Thursday: Jambalya with kielbasa
Friday: Pancakes, scrambled eggs, bacon
Saturday: Variation on Maple Chicken Salad using tangerines
