It’s 9:30 and it feels like it’s midnight here at the “Vanderbilt” home! We enjoyed church this morning and then spent the afternoon prepping for a wonderful Easter meal with friends. It was fantastic but I am TIRED.
I hope you had an awesome holiday as well. The further I get in my walk with Jesus, the more I am awed by His great sacrifice. I cried like a baby during church.
Here’s my plan for this week’s meals.
Sunday: Easter menu (that butterscotch cake is YOWZERS good!)
Tuesday: Indian Curry, brown rice
Wednesday: Chicken Sausage Meatballs with Gnocchi in Tomato Sauce
Friday: Ham and Potato Frittata
Saturday (in-laws here): Rosemary Pork Tenderloin, sweet potato cubes, salad
What’s one thing on your menu this week that I have to try? I would highly suggest you try that frittata if you have leftover ham–it’s super delicious!
