Menu Plan Monday

I’m quite proud to say that we followed last week’s menu plan very well! The verdict on new recipes? BIG thumbs up to the Autumn Chopped Salad (David even ate everything except the lettuce, I think, in large quantities); Buffalo Chickpea Burgers I wouldn’t make again, even though they are such a money-saver; and Hamburger Muffins need some tweaking but I think they’re a great idea.

Here’s this week’s menu plan for you.

Monday: Balsamic Chicken and Tortellini, spinach salad with balsamic vinaigrette
Tuesday: Meyer Lemon BBQ Pork Chops, mashed potatoes, scalloped corn
Wednesday: Easy Taco Bake, salad
Thursday: Pan-Roasted Chicken with Lemon-Garlic Green Beans and Red Potatoes
Friday: Pecan-Crusted Trout, wild/white rice mix, roasted broccoli
Saturday: Cajun Shrimp Pizza
Sunday: Leftovers

  2. Hmm… I wonder if the Hamburger Muffins would work better if the rest of the ingredients were mixed in with Bisquick, instead of with canned biscuits. (And that way, one could choose the gluten-free Bisquick, if needed.)
