Here are some suggestions for a lovely week of Springtime meals.
Monday: Chicken with Pineapple Rice, sauteed snow peas
Tuesday: Tomato-Basil Burgers, French fries, baby carrots
Wednesday: Chicken Chilaquiles Casserole (use any leftover chicken from Monday, shredded)
Thursday: Cajun Grilled Pork Chops with Creamy Mushroom Pan Sauce, mashed potatoes, five-minute spinach salad
Friday: Homemade Pizza (I use the pizza crust from The Pioneer Woman Cooks cookbook)
Saturday: Leftovers night
Sunday: Grilled Cheese Rolls, tomato soup
