Menu Plan Monday-ish

Why yes, it is Tuesday afternoon. We just got back from the beach yesterday afternoon and now we’re trying to reorient into “real life” – you know, where we’re not moving, traveling, or running around like crazy people.

We are still unpacking some, but we need to eat, so here’s my plan for the rest of this week!

Breakfasts:

Chocolate Coconut Oat Bars
Peaches and Cream Muffins
Baked Oatmeal
Smoothies with Homemade Yogurt 

Lunches:

Homemade Spaghetti-Os
Sandwiches on homemade bread – chicken, PBJ
leftovers

Dinners:

Tomato Soup with corn relish and bacon
Caesar Salad, Slow-Cooker Rotisserie Chicken, Applesauce, Peach Clafoutis
Balsamic Pot Roast, Mashed Potatoes, Carrots
Red Potato Hash with Eggs and Bacon
likely leftover chicken will be used in something like Chicken and Biscuits

I spent some time perusing recipes in my Nourishing Traditions cookbook today, so that is where the corn relish, caesar salad dressing, and clafoutis recipes come from. If they’re good, I might have a new recipe or two to share with you!
