Well, the dining hall is closed, so it’s back to cooking chez Vanderbilt. I always enjoy it, at least for a few weeks! So far we are loving summer around here. Having Mr. V home is a blessing, playing outside, cooking summery foods and treats, and just being all together.

We’re looking forward to two weeks of VBS, a dance recital, and a trip to my parents and to see our best friends from college in June!

Anyway, here’s what I have planned for this week.

  1. Gah, I need a plan. I’ve leftover (intentionally) oven baked chicken fajita filling to use for dinners for the next couple of nights, with a side of corn or a salad. There’s Tex Mex soup in the freezer for lunches. It’s time to “freezer eat” for a while so I can cycle through things. I know there are chicken legs (PW’s chicken leg recipe is pretty good), four or so pork chops, two Italian sausage and a pound of hamburger. I think I may actually have lasagna stuff on hand.

    • I actually inventoried the freezer because I’ve been sticking things in there prepping for summer! The pork roast, chicken legs, and shrimp for tacos were already there. I left some stuff for next week so I didn’t deplete it entirely!
