We’ve reached the end of our school year here at the private school where we live. And that equals the end of our dining hall meals for the summer. Alas! I have to cook dinner!
Really, it’s nice. It’s a good way for the kids to remember that most children just have to eat what their parents make. Mr. V and I lose weight when not presented with a buffet each evening. And I honestly do enjoy having meals around our own table and hosting friends more often.
I HATE making a month-long menu, but it sure helps me; I can stuff the freezer as full as it will get on days that I have time. So here is my month-long menu plan, plus the last few days of May for good measure.
May 29 – Spaghetti with chicken parmesan meatballs (double recipe and make Chicken Parm Burgers for the freezer)
May 30 – Parties
June 1 – Slow Cooker Honey Parmesan Pork Roast, leftover mashed potatoes, veggie
June 2 – school event
June 3 – Tomato-Basil Burgers, sauteed zucchini, salad
June 4 – Chicken Bruschetta Bake, broccoli
June 5 – Tacos, Baked Spanish Brown Rice
June 6 – Rehearsal Dinner
June 7 – Wedding
June 8 – Recovery day! No cooking!
June 9 – Ribs with Peach Barbecue Sauce, corn on the cob, boiled potatoes
June 10 – Orange-Balsamic Salmon, coleslaw, veggie
June 11 – Lasagna, green beans
June 12 – Eggs, pancakes
June 14 – Slow Cooker Sesame Chicken, rice, fruit
June 16 – Thai Chicken Skewers with Peanut Sauce, grilled veggies
June 17 – Beer-Braised Pork Cutlets, German potato salad, green beans
June 18 – Glazed Chicken Tenderloins, rice, carrots
June 19 – Clean out the fridge
June 20-29 out-of-town
June 30 – Easy Feta Pasta with Bacon and Peas
- Citrus Grilled Chicken
- Lemon Garlic Tuna Burgers
- Summer Bow-tie Pasta Salad
- Quesadilla/grilled cheese/pizza (you know, combo of bread + cheese)
- Apples, cheese, lunchmeat or leftover protein
- Peanut Butter Pancakes
- Baked Potatoes with Toppings
- Impossible Cheeseburger Pie
