The Menu Plan, Chattavore Edition

Because it’s summer, and I’ve run out of ideas, I decided just to go to my friend Mary’s site, Chattavore, and pull recipes for this week. In retrospect, this is the best idea EVER and I should just do it every summer. I bookmark almost everything Mary makes. It’s classic Southern food made-from-scratch, with a modern twist, usually. My kids will unfortunately not go for a lot of the delicious veggie dishes she’s made (and neither will my husband), but maybe I’ll just make those for me anyway.

(Like the Summer Squash Soup, which is amazingly delicious.)

Monday: Slow Cooker Pork Shoulder with Peach White Wine Sauce, fried okra, leftover Bacon-Cheese Cornbread Muffins
Tuesday: Pulled Pork Sandwiches with Peach BBQ Sauce, fried green tomatoes, potato salad
Wednesday: Pan Pizzas
Thursday: Slow Cooker Chicken and Dumplings, braised celery
Friday: Make-Ahead White Chicken Enchiladas (although we may make with more leftover pork – the only shoulder I found was 10 pounds!), refried beans, corn on the cob
Saturday: Leftovers or sandwiches
Sunday: out/clean out the fridge
Breakfasts: Peach Pancake Muffins, Maple-Pecan Scones, eggs, yogurt

I am so excited about cooking this week! Thanks Mary for making my life easier.

  1. Yum – this northerner loves pulled pork. And it freezes well – when I make one, I will freeze the leftovers in sandwich-size containers.

  2. I seriously feel so honor s that you are going to be making my recipes all week! I hope you love them all! It definitely sounds like you’ll have plenty of pulled pork…but a freezer full of pork can never be a bad thing!
