Menu Plan Monday

I thought last week’s everyone-picks-a-night went over pretty well! This summer, David has pretty much vetoed anything except PBJ and macaroni and cheese. He will sometimes eat other stuff, but not without complaining first. So on “his” night, we had grilled sausages and – gasp – blue box mac and cheese. (And some grilled zucchini … for me.) I mentioned that if we had that every night, the kids would eat dinner. Then the next night he was confused, because he thought we were going to have hots dogs and mac and cheese every night from now on.

I want my kids to be good eaters and more adventurous. Buy boy, that would sure be easier. Maybe some dino chicken nuggets thrown in …

Here’s my plan for this week, our last full week before school starts!

Sunday: Leftovers/sandwiches/whatever you can find
Monday: Crockpot Buffalo Chicken Pasta (with Ranch instead of Bleu Cheese dressing), peas
Tuesday: Lasagna Soup, Rosemary-Garlic Bread (I made this bread last week and it was so simple and delicious)
Wednesday: Sloppy Joes, sweet potato cubes, roasted broccoli
Thursday: Pulled Pork Shepherd’s Pie
Friday/Saturday: in-laws here

  1. We’re going to incorporate the “pick a night” in our menu planning. With 5 of us, it leaves one misc night and one for leftovers. 🙂 I have the feeling we’re going to be eating hotdogs and spaghetti every week.

    • Ha. Yeah, well, it works, right? I try not to get too uptight about hot dogs … I do try to buy the uncured kind. Someday these kids will be out of the house and I can eat all the gourmet food I want, right?
