We JUST got back from vacation, and I am totally not ready to make another monthlong menu plan. I did a lot of deviation from last month’s, mainly to use up more of what we had. This month I’m sticking to a weekly one. Hoping to use lots of fresh produce (local if I can get to a farmer’s market!) and enjoy some summery recipes.

Here’s what I have planned for this week.

Monday: Secret Recipe Club recipe

Tuesday: a variation on this Stir-Fried Pork using pork chops, zucchini, and bell peppers, baked brown rice

Wednesday: Smokehouse Maple Fajitas, fruit with yogurt dip, corn on the cob

Thursday: Panko-Crusted Pork Sandwiches, green beans, salad – because I begged Mary at Chattavore to recreate this incredible Tupleo Honey Cafe recipe for me!

Friday: BBQ with friends, bringing Fresh Peach Cake

Saturday: Homemade Pizza

Sunday: Turkey Parmesan Burgers, salad (earlier in the summer we had this turkey parmesan mixture as meatballs and they were a big hit!)

Breakfasts: Blueberry Cheesecake Smoothies, Paleo Slow Cooker Breakfast Casserole, Blackberry Lime Scones

Lunches: Leftovers, sandwiches, Hot and Sour Peanut Noodles, PBJ.

This is the last week I have to plan dinners before the dining hall opens up! Can I hear a big WOO HOO! (I know, I heard the boooo because you’re jealous. Sorry.)

I have enjoyed cooking this summer, but the cleaning is what makes me crazy! Plus when I don’t have to cook dinner I have more energy for baking for our dorm boys and trying out new recipes for this site.

That said, here’s what we’re eating this week.

What are you excited to eat this week? (By the way, the Brunswick Stew I made this past week was awesome! It made me very nostalgic for Virginia and the times we would make vats of the stew to sell for a youth fundraiser.)

Welcome to this week’s menu plan! Did you have a happy cooking week? Despite the fact that I rarely have to cook dinner because we eat in the school’s dining hall, I cooked up a STORM last week.

I made: Toddler Thai Noodles, Pasta with Chicken Meatballs (want a recipe? I just made it up as I went along.), French Lemon Yogurt Cake (some were cupcakes), Cake Batter Pudding Cookies, Peanut Butter Blossoms, three meals for one friend (PW lasagna, Islander Pork Roast, Tomato Basil Burgers), one meal for another friend (chicken and cherries, brown rice, strawberry-lemon pie) AND a dinner for us and four of our high-school dorm boys. For that, I made steaks, fried potato slices, carrot souffle, spring greens and berries salad, and Boston cream pie cupcakes.

So yeah, my kitchen got a workout. And just reiterated how much I hate doing dishes.

Monday: Grilled Peppers and Sausage with Cheese Grits

Dinner: Leftovers

Wednesday
Lunch: Taco Corn Fritters
Dinner: Smoky Steak Kebabs, brown rice, salad

Thursday
Dinner: Tacos, Jalapeno-Lime Corn on the Cob

Lunch: Pasta Salad
Dinner: leftovers

Saturday
Dinner: Rosemary-Balsamic Chicken and Tortellini, Salad

Sunday
Breakfast: Banana Chocolate Chip Muffins
Dinner: BBQ Ranch Chicken Spaghetti
